The restaurant manager at Topas Ecolodge will be leading a team of 20 persons on the different outlets: bar, restaurant, pool. The short term objective is to structure the team around supervisors and runners to implement a smooth system for a better service. The restaurant manager will control the stock of beverages, work closely with the Chef for an improved efficiency between departments and lead training for all its staff. The restaurant manager needs to be at ease with problem solving and complaint management to always assist guests in any of their requests.
- Responsibilities:
- He/she is responsible of the relations between the personnel and the general manager
- In charge of the quality of all services provided to the guests within the premises
- Leads and trains the team
- transmits all the information relayed to her/him by the GM to the team
- Manages the guest satisfaction efforts of the different outlets
- Takes care of the administrative tasks, of the POS and F&B reports
- Oversees the waste reduction and resources management to respect Topas Ecolodge philosophy
- Main tasks:
- He/she prepares the working schedule of outlets employees
- Control the hygiene in all working areas; equipment and materials
- Control the storage, stock and consumption of the goods
- Control the reservations at the restaurant and transmit the information to the kitchen
- Maintain the costs of production low while increasing guest satisfaction
- Supervise the service at breakfast, lunch and dinner
- Assist the GM in writing all policies and procedures
- For the staff:
- Develop the positive attitude, job skill, knowledge, autonomy and creativity of the staff
- Adapt to their capacities and aptitudes
- Respect the needs and individuality of the staff
- Develop their self-confidence
- Control the daily operation
- Set an example and ensure that staff adheres to dress code and behavior as well as hygiene standards
- For guest satisfaction:
- Develop products / services to suit the needs of the different types of clients
- Monitor performances of sales outlets and report to the GM
- Develop promotion and event nights to satisfy the needs of the guests
- Ensure that all guests leave his outlet satisfied
- Perform other duties as maybe assigned
